Roasted Vegetables - Recipe for Easy Roasted Vegetables

Do you know how easy it is to roast your veggies? Preparing your veggies this way is super simple to do and is an easy way to set yourself up for success! Put your favourite veggies on a cookie sheet lined with foil. Drizzle extra virgin olive oil and sprinkle with salt and pepper. Roast at 425 degrees for 10 minutes. Season again with salt and pepper. These are great all by themselves, and also to use in your omelets! I love red peppers and broccoli! What are some of your favourite vegetables to roast?

  1. Butternut squash, sweet potato, carrots, parsnips, cauliflower, baby potatoes,baby tomatoes, corn, peppers…just about anything you have in your fridge works. Have them cooked for dinner…on the barbecue is good….or cut them up and have them as a salad for lunch uncooked. Salt and pepper is good, but we also add sweet paprika, garlic powder, turmeric. We also planted basil, rosemary, chives, chamomile, and add these for our lunchtime salads. Sue

Roasted peppers in olive oil; roasted cauliflour with cheese sauce; baked potatoes, crisp skins with butter; roasted whole Tomato stuffed with goat’s cheese; roasted corn on the cob in its sheath, then removed and rolled in butter; roasted pepper squash halves with maple syrup in the half; a medeley of roasted carrots, onions, peppers and whatever else you want in an omelet for Sunday Night Supper!! Go for it!!
